Chain: short for a blockchain. A blockchain is a database to stores data in blocks that linked through chains. These data cannot be modified or delete.
Ecosystem: ecosystem is usually referred to a network of specific blockchain related protocols, projects, users, miners, nodes, etc.
DEX: Decentralized Exchange
TXNS: Transaction numbers
Protocols: software that provide a utility on a network that projects can use it to develop it (like UniSwap protocol that provide DEX utility)
Active Address: number of active addresses in 24 hours.
Stables: in this paper it refers to stable coin marketcap.
TVL: Total Value Locked. Represent the value of tokens that are locked in that network.
Mcap/TVL: ratio of Marketcap to TVL. Lower is better. Ratio under one show that total value locked in this network is more than its blockchain market cap.
ecosystem
In following table some of known networks are chose to be consider, you can compare them to see which networks are more active, the main important thing is this data are changing every minute based on networks activity. You can check them periodically to see what changes happened. Some networks have a slow growth some others grow rapidly. Choose the network to invest on wisely.
